TGE Recipes: Shakshuka from Miri Devora of Queen of Jeans

Shakshuka

Ingredients:

  •  1/4 cup olive oil
  • 1-3 jalapeños (depending on the size. If they're huge you probably only need one)
  • 1 onion
  • 1 bell pepper
  • 5 garlic cloves
  • 1 tsp cumin
  • 1 tbsp paprika
  • dash or two of cayenne
  • 1 28 oz. can whole tomatoes
  • up to 6 eggs
  • feta cheese
  • parsley

Directions

Heat the oil in a skillet over med-high. Add the jalapeños, onion & pepper and cook ~6mins. Add the garlic & spices, cook another 2 mins. Then with your hands, crush up the canned tomatoes in a large bowl and add about 1/4 cup of water to that before pouring it into the skillet. Reduce the heat to medium and simmer for ~15 mins. Add S & P to taste. The broth should thicken.

At this point, you'll add the eggs. Crack the eggs over the stew. I like to use a fork and sort of poke at the white because I don't generally like runny eggs! Then cover the skillet with a lid and wait for the eggs to cook through. ~5 mins. Dress with parsley and feta cheese. Serve the shak with an awesome bread, if you fancy maybe some challah!
